How we're different

  • Founder's sensitive stomach forced him to make the most intentional cookie on the market. Einkorn + fermentation.
  • Organic einkorn flour costs ~5× conventional wheat.
  • Three nights fermenting vs. three minutes mixing. That hits batch size, labor, and storage.
  • Butter from grass-fed cows. Eggs from pastured hens.
  • Small batches, baked weekly, shipped from our kitchen — not a contract manufacturer.

FAQs

Are these gluten-free?
No. Einkorn is an ancient form of wheat, and wheat has gluten. What einkorn has less of is the modern, hybridized gluten structure that gives a lot of people trouble. If you have celiac, please don't buy these. If regular wheat makes you feel heavy or bloated, einkorn is worth a try — that's the most common story in our reviews.
Will they taste like sourdough bread?
No. The sourdough fermentation is what we use to make the dough; you won't taste tang or bread flavor. You'll taste a chocolate chip cookie. One of our reviewers put it well: “No sourdough taste if that isn't your thing. But I appreciate the flour used was fermented sourdough.”
Are they okay for kids?
Yes — and this is the most common reason people reorder. Parents tell us these are the cookies they hand over without negotiating about it. Read the ingredient list and decide for your own family.
My stomach is sensitive. Will these bother me?
We can't promise. We can tell you that “no bloating,” “didn't make me feel gross,” and “the only cookie that doesn't make my stomach hurt” are some of the most-repeated phrases in our reviews. Buy one bag, eat two cookies, see how you feel.
How long do they last?
4 months unopened. Once you open a bag, eat them within a couple of weeks for best texture. You can also freeze them — they thaw in about 10 minutes and stay crunchy.
How long does shipping take?
Most orders ship within 2–3 days. If we happen to run out of stock, your order will go out within 4–6 days instead — we bake every batch ourselves, so we never cut corners just to ship faster.
What if my order arrives damaged?
We don't offer refunds, but if your order arrives damaged or defective, we'll replace it on us. Email us with a photo. We bake every batch ourselves — we want to know.
