While we haven’t done formal studies, many of our customers say they find our cookies easier to digest than traditional ones — likely thanks to the einkorn flour and long sourdough fermentation. You still get a delicious, real cookie — not a cardboard substitute — and for some, without the usual gut discomfort

How Long Do They Last?

Based on our own internal testing, the cookies stay fresh for up to 2 months unopened. They may last longer, but we’ll need to conduct formal shelf life testing to confirm that. For now, we recommend enjoying them within 2 months for the best quality.
